Enoki Mushroom "Chicken"

What you need

bunch enoki mushrooms
cup vegetable oil

cup sweet chilli sauce

tbsp paprika

cup all purpose flour
purple potatoes

cup non-dairy milk
Instructions
1. Prepare the purple sweet potato fries: Wash, peel, and cut the sweet potatoes into fry shapes. Toss with oil, salt, and pepper, and bake until crispy. 2. Prepare the enoki mushrooms: Trim off the base of the enoki mushrooms. Separate them into smaller clusters. 3. Make the batter: In a bowl, combine flour, spices (paprika, garlic powder, onion powder, salt, pepper), and plant-based milk. Whisk until smooth. 4. Coat the mushrooms: Dip each enoki cluster into the batter, ensuring it's fully coated. 5. Fry the mushrooms: Heat oil in a pan or deep fryer. Carefully place the battered mushrooms into the hot oil and fry until golden brown and crispy. 6. Drain and serve: Remove the fried mushrooms and place them on a wire rack or paper towel-lined plate to drain excess oil. Serve immediately with the purple sweet potato fries, garlic dip, and sweet chili dip.
